Ingredients
  

  • 1 cup unsalted butter softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1 tsp ground cardamom
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • Optional: 1/2 cup chopped nuts or white chocolate chips

Method
 

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugar: In a large bowl, beat the butter, brown sugar, and granulated sugar together until creamy and smooth.
  3. Add Egg and Vanilla: Mix in the egg and vanilla extract until well combined.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, cardamom, ginger, and cloves.
  5. Combine Wet and Dry Ingredients: Gradually add the dry mixture to the wet mixture until a dough forms. Fold in nuts or white chocolate chips if using.
  6. Scoop Cookies: Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake: Bake for 10–12 minutes or until the edges are lightly golden.
  8. Cool: Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • Don’t overbake: Cookies will firm up as they cool.
  • Adjust spices: Feel free to increase or decrease cinnamon, cardamom, or ginger according to your taste.
  • Storage: Store in an airtight container at room temperature for up to a week, or freeze for longer shelf life.
  • Extra touch: Sprinkle cinnamon sugar on top before baking for added crunch and sparkle.
