Ingredients
  

  • 1 medium butternut squash
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder optional
  • 1 teaspoon fresh herbs like rosemary or thyme optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Peel the butternut squash and cut it into small cubes.
  3. Place the cubes on a baking sheet lined with parchment paper.
  4. Drizzle with olive oil and sprinkle with salt, pepper, and garlic powder.
  5. Toss everything until the squash is evenly coated.
  6. Spread the cubes out so they’re not touching each other.
  7. Roast for 25–35 minutes, flipping halfway through.
  8. Remove when the squash is golden and tender.
  9. Serve warm as a side dish or add it to salads and grain bowls.
