Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Wash the delicata squash thoroughly. Cut each one in half lengthwise and scoop out the seeds.
Slice into ½-inch thick half-moons and place in a large bowl.
Add olive oil, salt, pepper, garlic powder, and smoked paprika (or cinnamon). Toss until evenly coated.
Arrange slices in a single layer on the baking sheet. Drizzle lightly with maple syrup or honey if desired.
Roast for 20–25 minutes, flipping halfway through, until golden brown and tender.
Remove from the oven and sprinkle with fresh herbs. Serve warm as a side dish or add to salads and grain bowls.
